ECP//Egg Chicken Potato

I invented a new recipe with egg, chicken and potato! Who doesn't like the combination!? This is such a unique idea but the sweet and sour chicken and egg sauce goes so well together! I also just learned an amazing twice baked potato recipe from my culinary school and it was a perfect match. This dish is so delicious I promise you!!

<Directions> (for the best twice baked potato)

  1. Preheat the oven to 400 degrees.

  2. Wash potatoes and dry them.

  3. In a bowl, add oil and salt mix well then toss potatoes.

  4. Place the potatoes on a baking sheet and cook in oven for 60 minutes.

  5. Cut each potato in half lengthwise. Scrape out the insides.

  6. Make butter sauce with butter, heavy cream, spring thyme and rosemary.

  7. Mix the butter sauce with inside of potato and chopped parsley.

  8. Fill the potato shells with the filling.

  9. Put then in the oven for15 minutes.

<Directions> (for sweet and sour chicken)

  1. Brine (means marinate) chicken for an hour with water, salt and sugar.

  2. Dry the chicken and coat with egg and flour mix.

  3. Coat with flour/cornstarch/panko/bread crumbs. (I used Tempra flour)

  4. Heat the oil over low heat until it reaches at least 300 degrees F. When the oil is hot, add all the chicken into the batter and fully coat each piece.

  5. Fry for 10 minutes

  6. Use the slotted spoon to transfer the chicken to drain on a wire rack or paper towels on a baking sheet.

  7. Let the chicken rest, 15–20 minutes

  8. Fry the chicken for second time about 5 minutes.

  9. Drain on rack for 10 more minutes.

  10. Mix soy sauce, rice vinegar, and sugar in pot until boiling..

  11. In a bowl, toss fried chicken and sauce together.

<Directions> (for spiced egg sauce)

  1. Boil water in a pot and put eggs then bring back to boil and simmer for 9 minutes.

  2. Remove eggs with a slotted spoon to a large bowl of ice water. Let them sit for at least 10 minutes.

  3. Peel the eggs under running water.

  4. Chop eggs and mix with mayo, green onions, curry spice and salt. (can also add chopped pickles or onions)

<Ingredients for chicken>

  • 1 lb chicken thighs

  • 1 egg

  • 2 tbsp flour

  • 2 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 1 tbsp sugar

<Ingredients for twice baked potato>

  • 2 large russet potatoes

  • 1 tbsp chopped garlic

  • 4 tbsp unsalted butter

  • 1/4 cup heavy cream

  • 1 spring thyme

  • 1 spring rosemary

  • 1/2 tsp salt

  • 1/4 tsp black pepper

<Ingredients for egg sauce>

  • 3 eggs

  • 1 tbsp chopped green onions/scallions

  • 2 tbsp mayonaise

  • 1/2 tsp curry powder

  • 1/2 tsp salt

  • 1 tsp maple syrup or sugar

  • 1/4 tsp black pepper

The three main ingredients of ECP are so delicious together but can also be used as the star of their own dish. Please give it a try! If you are a vegetarian I will recommend to use portobello mushrooms or cauliflower instead of chicken. You will definitely enjoy!
