My daughter loves Indian food and asks me to buy frozen tikka masala from Trader Joe's all the time. I found a very authentic Indian supermarket in West Los Angeles so I decided to buy all the right ingredients and make it from scratch at home.
I found the "Tikka masala" spice so it was easy to make a dish with authentic local Indian flavor! Here is my recipe, hope you enjoy!!
Marinade chicken in yogurt with ginger, garlic, salt, and black pepper for 2 to 3 hours .
Wash the rice and soak in water for 1 hour before cooking.
Combine rice, chicken stock and salt, cover and bring to a boil. Simmer for 20 minutes.
Arrange the chicken on the rack and broil for 4 to 5 minutes.
In a medium pan cook Serrano chili with olive oil and ghee/butter for 5 minutes.
Add the ginger, garlic and tomato paste, along with the fenugreek and tikka masala spice then cook 3 more minutes.
Add chopped tomato and water, bring to a boil and simmer for 10 minutes.
Blend the tomato mix until smooth. Put back on stove.
Add chicken then cook 10 more minutes.
Garnish with cilantro and ready to go!

1 pund Chicken thighs
1 cup Indian yogurt/plain yogurt
1 tbsp crushed ginger
3 tbsp crushed garlic
1 tsp salt
1/2 tsp black pepper

3 medium size chopped tomato
3 tbsp ghee/butter
2 tsp olive oil
2 tbsp crushed garlic
2 tbsp crushed ginger
1 chopped serrano chili
2 tbsp tomato paste
1/2 heavy cream
1 tbsp tikka masala spice
1 tsp fenugreek spice
2 tsp salt
2 tb chopped fresh cilantro
1 cup water
<Ingredients for rice>
1 cup Jazmine rice
1.5 cup chicken stock
1/2 tsp salt
You might think Indian food is hot and spicy but this Tikka masala is very mild
and fruity. I bet your family (kids especially) will love this!
