Pork is the staple food in most Japanese households. Many of my mother's specialties were pork dishes as well. I especially liked this grilled ginger pork. It is actually very easy to make if you have the right ingredients. Most of Japanese foods are based on soy sauce, sake and mirin which is a type of rice wine similar to sake but with a lower alcohol content and higher sugar content. If you want to make authentic Japanese dishes, I recommend to have these 3 key ingredients in your kitchen and you will be all set!

Grate the ginger and squeeze reserving the juice.
In a small bowl, combine the soy sauce, mirin, sake, and ginger juice.
Slice pork loin very thin or you can use thin sliced pork (I used pork loin this time).
Marinate the pork with half the ginger sauce for 10 minutes.
Slice the onion then chop green onions and set aside.
Preheat a large frying pan over medium-high heat. When the pan is hot, add the oil and then add the pork slices in a single layer. Flip the pork once the bottom starts to turn a golden brown.
When the pork is no longer pink, transfer to a plate. Make sure not to overcook the pork at this stage as we will continue to cook it in the sauce later.
Once you've removed the pork, add more oil to the pan and then add the onion slices. Sauté the onion on medium heat until they begin to caramelize about 3-5 minutes.
Add the pork back to the pan, pour in the other half of the ginger sauce, simmer for 2 more minutes. Add salt, pepper and garnish then ready to go.

1 lb pork loin, sliced thin
1/2 onion, sliced
2 tbs green onion, chopped
1 tbs ginger juice
2 tbs soy sauce
1 tbs mirin
1 tbs sake
1/4 tsp salt
1/4 tsp black pepper
You can purchase extremely thin sliced pork in any Japanese or Asian market so I recommend using this. Thin sliced pork takes a super short time to cook so dinner can be ready in as much time as it takes to make the rice. I will share more pork dishes in my blog so stay tuned!
