Japanese Dynamite Mussels

In Japan, mussels are not that common. Instead we eat clams, oysters and scallops more often. For me mussels are a very unique and new ingredient so I am excited to use when I can. I found some nice looking New Zealand mussels, so I decided to create an American Japanese dish called dynamite mussels. I used Japanese mayonnaise but of course you can use American or handmade mayonnaise. In the past year Japanese mayonnaise has become so trendy in the culinary world so it might be a good idea to add to your pantry.

  1. Preheat oven to 400 degrees.

  2. Wash/defrost the mussels, then dry and separate from the shell.

  3. Mix mayonnaise with remaining ingredients and spoon a generous amount onto the mussels. Sprinkle PANKO on top.

  4. Bake in oven for 15 minutes.

  5. Garnish with lemon, spicy sauce and parsley if you want.

<Ingredients> about 3 servings

  • 12 mussels

  • 5 tbsp Japanese mayonnaise/can be American mayonnaise

  • 1 shaved garlic clove

  • 1 tsp lemon peel

  • 1 tbsp chopped parsley

  • 2 tbsp cheddar cheese

  • 1 tbsp PANKO/Japanese bread crumbs

Be sure to let the mussels sit a few minutes before you dig in. They get steamy underneath the creamy mayo and crunchy PANKO so when you take a bite you get a flavor packed taste explosion. It's DYNAMITE!!
