Japanese Roasted Sweet Potato, Yaki-Imo

Winter in Japan can be harsh and super cold but you can find vendors who sell warm sweet potatoes on the street. They usually bake these potatoes on hot stones and so they are called Ishi-yaki-imo (Ishi/stone, Yaki/baked, and Imo/potato). Japanese sweet potatoes are extremely sweet so you can bake them without any salt or other spices. In the USA, we can find either Japanese or Korean sweet potatoes and make our own Ishi-yaki-imo in the oven at home. I will share the easiest way to cook the sweet potato. I actually learned this method from my culinary school so it is definitely legit!


<Directions>

  1. Preheat oven to 425°F.

  2. Wash sweet potato, dry and cut into 2 inch pieces.

  3. In a bowl, combine oil and salt then toss with the diced potato.

  4. Spread on a baking sheet. Roast for 25 minutes until brown and tender in the middle.

  5. Garnish with fresh parsley.

<Ingredients>

  • 1 large sweet potato

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1 tsp chopped fresh parsley

You can use the same recipe for any potato and it will instantly become a yummy snack! Please try it at home and I promise you will love the taste of Japanese sweet potato!.
