Kanpachi Crudo

In North Hollywood, I found the best European market called Epicurus Gourmet. They sell cheese, pâté, caviar, duck, lamb, olive oil, truffles, cookies, bread and lots of other yummy food from all over Europe. At this store, I purchased a tasty truffle salt from Italy and a bottle of capers from Spain so I decided to make a Kanpachi Crudo. I bought the Kanpachi sashimi from my go to store, Tokyo Central Gardena. They have the best meat and freshest seafood selection in my local area.

  1. Slice the fish thin and marinate with lemon, olive oil, shaved garlic, honey, white pepper and truffle salt for 10 minutes in refrigerator.

  2. Slice the cucumber and lay on plate.

  3. Roll the fish and place on top of cucumber.

  4. Garnish with capers and chopped parsley.

<Ingredients> about 2 servings

  • 1/4 lb Kanpachi/any sashimi grade fish

  • 1 tbsp Italian capers

  • 1 tbsp chopped parsley

  • 1 clove shaved garlic

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • 1 tsp honey

  • 1/4 tsp truffle salt

  • 1/8 tsp white pepper

I visited Barcelona, Spain when I was in college and I loved everything I ate while I was there, especially the paella. At Epicurus Gourmet I found saffran, capers and a paella pan from Spain so I can't wait to make this classic dish at home.

Also I found truffle salt, coffee beans and sun dried tomato from Italy so I guess I have to make more Italian food too. Something to look forward to!
